| Posted : Saturday, 2 July 2005 - 08:21 Try peeling the eggplants and then slicing them in 1/4" rounds. Next get a frying skillet ready with vegetable oil then dip each slice in egg, seasoned with a little salt, parsley, oregano and garlic, bread it with bread crumbs and fry it. Open up a brown bag to spread the fried eggplant and absorb excess oil and moisture. Now stack a layer at a time of the cooled breaded eggplants on a dish and add tomato sauce to each layer and sprinkle with grated romano cheese. Refrigerate them. Add about three slices to a fresh Italian bread roll and you will understand one of the meanings of life when you eat it.

I turn to the language of Arabic.
In Arabic, the word eggplant is batanjan (pronounced, button-Jane, something like that). This word is a homophone of another arabic phrase called Beitejan (pronounced Beit-in-Jane). What is Beit-in-Jane?

| Posted : Sunday, 3 July 2005 - 07:30 Well I told you all to peel it first.  Anywho then vote zuchini. Zuchini doesn't have to be peeled ... just wash it and slice it up into a frying pan. Add salt and fresh garlic. I don't use black pepper any more but chopped red pepper will add some zest to both these recipes during frying.

| Posted : Tuesday, 5 July 2005 - 16:26 Actually for you Princess I'll go the whole 9 yards because it's actually a shortened version of eggplant parmesan; So if you use a pyrex dish that can be put in the oven, add a cheese like shredded mozzarella, or domestic slicing provolone or even muenster to each layer with also the tomato sauce and grated romano. Then pop it in the oven and bake it at 350 for half an hour and serve hot or cold; but I enjoy the short cut version just as much.

Eggplants have a long and illustrious history. First dicovered by Columbus' assistant "Murray", they were brought back to the Old World and started a sensation. Whole wars were fought over what to call this big juicy purple fella! The Unknown Purple Vegetable War of 1672-89" is a perfect example. The French wanted to call it "Pomme de Hades" but the English insisted it be called "That Bloody Purple W ankerfruit."
For many years the battle raged, thousands of lives were lost and still the vegetable we call an Eggplant went unnamed. After all the brutal years of the war, both sides were exhausted and no longer gave a damn what it was called.
This brings us to Benjamin Franklin, inventor of the bifocal lens. One day as he walked in his garden, Ben espied a new plant. "What ho, a new plant!" he exclaimed. Ben was quick that way. He decided to name it the "Franklinfruit" and wrote extensively on the subject in Poor Richard's Almanac.
"A Franklinfruit a week keeps the jewels at their peak" was just one of the phrases Mr. Franklin coined. None of them ever really caught on. Nobody wanted to eat Ben anyway, so a name was still needed.
During WW2, the Nazis were responsible for cooking and eating many millions of Eggplants and they also used them as weapons.
The first eggplant in space was Yuri Eggarin, a Russian eggplantanaut. Unfortunately, like many Russian space missions, Yuri's went awry. He still circles the globe, his skin toasted off by solar radiation, exposing his white body to space's harsh light.
Bill Clinton was caught with an eggplant in Lincoln's bedroom.
Today, we know the eggplant by its true name, and thanks to Bob Higgley of Rapid City, Iowa, we can rest assured that the wonderful eggplant will continue to delight and baffle folks everywhere for ages to come.
