Is there a help sire that lists all of the troop types, along with their damage and defense ratings? Or, do I keep building, experimenting and taking notes to compile a list?

There's an online manual that gives all that info...Look under the help button for the online manual and getting started and FAQ pages...A lot of it IS experimenting until you find the combination that works well for you...
